I installed the version 3.10 on my I Mac (version 10.15.7) and I discover that I have an old version already installed 2.7. It is impossible to uninstall this old version.

It’s probably Python shipped with macOS[1]. You should not uninstall that version; it can break your system.
It is perfectly possible to have multiple versions of Python installed, so there should be no need to uninstall it. You can safely install Python 3.10 alongside Python 2.7.
if which python returns /usr/bin/python, it is the system supplied version. Do not remove it. ↩︎
